I recently bought Tanya Burr's new book Love Tanya and although I love the whole book, my favourite section has to be the baking section! I thought I'd try out the 'Sunday Cake' recipe and it turned out so well that I thought I'd share it on here!!
For the cake you will need:
170g butter,
170g caster sugar,
3 eggs,
30g cocoa powder,
140g self raising flour,
1 and 1/2 teaspoons baking powder,
For the icing inside you will need:
60g butter
110g icing sugar
Cocoa powder as the flavouring
For the topping you will need:
200g bar of chocolate to melt
Decorations (eg: smarties, M&M's, marshmallows, chocolate buttons, maltesers)
Instructions:
Pre heat the oven to 180*c and line two baking tins with baking parchment. Cream the butter and sugar together until you get a creamy mixture. Add the eggs, sifted cocoa, flour and baking powder and mix well. Divide the mixture between the two tins and put them in the oven for about 18-20 minutes. (Test the mixture is cooked by inserting a skewer and seeing if it comes out clean)
For the icing, whisk the butter, icing sugar and cocoa powder together and for the topping, melt the chocolate in a bowl over a pan of simmering water.
When the cake is cool, sandwich the two sides together with the icing and pour melted chocolate over the top of the cake. Decorate with your chosen decorations - I used marshmallows and M&M's but you can use whatever sweets/ chocolate you have in your house!
